Why this size
3What happens, and why
The Instagram Help Center says a shared photo is uploaded at the best resolution possible, up to a width of 1080 pixels. A photo between 320 and 1080 pixels wide keeps its original resolution as long as its aspect ratio is between 1.91:1 and 3:4, which at 1080 px wide means a height between 566 and 1440 pixels. A photo outside that range is cropped to fit a supported ratio. 4:5 sits inside the range and comes to 1080 × 1350 px.
For years 4:5 was the tallest ratio the feed accepted. The Help Center now allows up to 3:4 (1080 × 1440 px), so 4:5 is no longer the maximum, but a 4:5 photo is never cropped and remains the common portrait size. Instagram re-compresses every upload, so a lossless crop does not survive to the screen as such; what it does prevent is one more generation of loss before the file leaves your device.
This page crops at 4:5 with the size box set to 1080 × 1350. If the original is larger, that region is cut out at full resolution and Instagram sizes it down to 1080 px on upload; if it is smaller, you get the largest 4:5 crop the photo allows.

3:4 is taller and takes a little more of the screen. Going by the Help Center, 3:4 is 1080 × 1440 px and 4:5 is 1080 × 1350 px. Neither is cropped.
What happens to a photo wider than 1080 px
The Help Center says a higher-resolution photo is sized down to a width of 1080 pixels. You can crop the full-size original at 4:5 and upload it as is, or crop it down to 1080 × 1350 first.
Does Instagram re-compress a losslessly cropped photo
Yes. Instagram re-encodes the photo when you upload it. The value of a lossless crop is that the original file on your device does not lose another generation before that happens.
